Sure, curry powder + vegetables is probably one of the easiest meals to make.
But I'm curious if anyone knows any good curry recipes (japanese, indian, or etc) that I could try making because the only one I've known how to make is the malay version.

If you have access to Udon noodles, then making a slight curry soup with your udon (or soba or ramen noodles) is always good. Throw some chicken and mushrooms in there as well and you are golden.
You can do just about anything with soup curry, if you look it up there are a lot of recipes. but basically and broth base added with some curry mix can make your soup, then add veggies, meats, and cheeses
They do lots of japanese food recipes. <3
Although some ingredients you may not be able to buy unless you have a jap food specialty market.
But its as authentic as you can get.
