Diner Toast and Toasted Cheese

Now I may be alien in the fact that I love diner toast and toasted cheese. Whenever I go out to a diner, I get numerous orders of toast or toasted cheese depending on the time of day.
I don't know why, but the taste completely different from whenever I make them. People have called me odd due to my love for diner toast, them apparently not being able to tell the difference.
What is so unique about diner toast and toasted cheese, so unique that I can't replicate it myself yet every diner I go to regardless of the state they occupy tastes different?!

Yes It really taste different. I have tried that in making sauce how street vendors do them. I have never tried toasted cheese, how is it?
