I've been looking for an effective Matroska (.mkv) video converter, but have failed to do so miserably. Does anyone have any suggestions for one?

What do you want to do exactly ? And Mkv is not a codec, it's a container. You have to extract the differents tracks (videoa, audio, subs), then re-encode them together, with VirtualDubMod fpr example.

For example I have a Matroska video complete with subs and audio. How do I create a mp4 file version of that?

can't you simply demux the mkv contents and put it in a mp4 container?

you'll need mkvtoolnix + MKVextractGUI + mp4box.

One program that I always like to use is Super@. It converts anything into anything. It's also a freeware. http://www.erightsoft.com/S6Kg1.html
