The role of the comedian hasn't changed since it was the role of the court jester. The job is to say that which no one is comfortable saying, pointing out the crap that needs addressed. Because they do so in the form of a joke, it's not considered appropriate to kill them over it, but that didn't stop some royalty if the subject was sore enough. As to why you keep hearing comedians picking on religion, it's probably because we have a number of them that are more and more urging an intolerance to the point of violence for other religions. No ten years or so ago, the US military chaplains office would have had a complete fit if it got word some chaplain was advocating conversion to s specific religion, but now there's a well documented and unofficial movement to do so. It's disgusting. This is America, we're not supposed to oppress any religion. Any given member is still to be held to the law, but other than that they are free to believe what they want. I give it no more than 5 years before someone decides to try and pass a law outlawing any non-christian religion in the US.

Lewis Black's style (along with that of the majority of comics who criticize religion) is mostly satire and observational. Religion is an easy source of material. Along with politics, it is one of the most pressing issues in human society. You encounter it, even when its completely irrelevant and everyone, even the faithful, have issues with it, whether they're with their own beliefs or someone else's. The truth is that they're only "very bold and open" because they're on stage talking about it. There's countless people who do the exact same thing, they just don't have such a large audience. The same thing can be said for politics, any type of human behavior, or a wide array of other subjects.
