I don't think I ever was completely satisfied with an anime ending I usually ended up reading the manga or just punching a tree.

When unsatisfied, read the original material :p
FMA:Brotherhood anime and FMA manga will end simultaneously with the same ending so if there are any complaints there, it should be of the author. But then again, FMA is made of win anyway.

People who don't understand Evangelion's original ending are just dense as hell, or don't bother actually trying to understand it. Maybe I speak as a fangirl, considering it's my favorite series ever. You just have to watch it a couple of times to appreciate it, perhaps even watch it with director's commentary, it gives a lot of perspectives you wouldn't have thought of.

EVA was like Donnie Darko for me, I had to watch it a few times to fully get and enjoy it.
Another prime example of WTF endings and mid series bizzaro-ness is Hellsing, but that was because it was started before the first tankoban had been released and it fell all to pieces while the creator was busily working his ass off on other projects, Hellsing Ultimate OWNS!
Fruits Basket and Ranma 1/2 are the only anime I've seen that left me wanting more. I still want more from Ranma which is where doujin comes in and makes the world a better, hornier, place.

i proffered the end of eva better than the original series i mean i get both endings but the end of eva left me with some hope at least

I think i'm one of the few people who actually liked the Death Note ending. It shows that even though Light has done so much, gone through so much, he is still human and can overlook the tiniest thing that completely wipes him out. I'm also one fo the few people who liked the ending to Fullmetal Alchemist: The Conquerer of Shamballa.

Ending stuff is hard, and since there's only one ending, there bound to be detractors..
Like EVA, I found the last two episode are just.. inspired. Or ARIA, which has a pretty good ending, but there's some people didn't like it because there's no etc etc etc...
Geass and Gurren Lagann ending is also like that...

Can't say I found the last two episodes of Evangelion "inspired", but they certainly did NOT deserve the horrible rep they have gotten. Personally, I liked Evangelion's original ending, but it is fairly unorthodox and requires a good bit of effort on the viewers part - not something everyone is comfortable with. End of Evangelion definitely has more of a feeling of 'closer' and probably appeals more to most fans.
As to why endings in general are the way they are - I disagree some what with the 'budget' opinions. I think it has much more to do with the hope that there will be additional seasons eventually commissioned and the desire to leave things in a manner which supports that possibility.
