Well, Shinigami do age . . . kind of. I'm not sure if they age slower if they have greater spiritual power or if they all age very slowly, but they do seem to get older.
The biggest plot hole is currently what happens to Shinigami (or any residents of the spirit world) when they die. When Hollows get killed by zanpakuto, they are purified, and their souls go to the spirit world (or hell, if they were evil), but what if someone dies in the spirit world? I've heard that they are reincarnated on earth, but I think that was just a theory fans have come up with.
Seriously, Gods of Death are scared of death? That is kind of fucked up.
