Nodame isn't really seinen nor josei, but still good. (I'd say comedy and light romance. But not a seinen or josei in any way)

Yep. That's basically the difference there, except with more graphic violence.
Uhh, no. There ARE quite some seinen that are more violent than your average shounen. But that really isn't what distinguishes them apart. It's the content, that's usually more mature/ psychological. If you look at Bleach or whattever, it can be quite graphic too, but that doesn't make it a seinen.
Quick note here, remember Honey&clover? That's a perfect example of what a josei manga is. Unfortunately, there seems to be a small market for these kinds of mangas.

-Koi Kaze (josei. But do try the anime instead of the manga, as the anime is slightly superior)
-Gantz (seinen. So juicy)
-Duds Hunt (delicious seinen one-shot)
-Reset (same as the above)
-GOTH (gory seinen one-shot)
-Lament of the lamb (seinen/josei?)
