I don't think Minori just acts eccentrically. A person can be goofy and funny but can have a serious side that comes out when it needs to. I do agree though that she was trying to change the subject at the end.
And you have to admit that Ami sends a lot of mixed signals and you don't know when she's being sincere or playing games with people.
As for Taiga, she's just confused about what she wants.
