If we are talking about shows then FMA brotherhood, outlaw star, cowboy bebop. Now for movies princess mononoke is my favorite I even have a princess mononoke tattoo
Oh this is a hard one cause it really is base on my mood but I think if had to put my finger on it, the anime I've re-watched several times would be Code Geass
If we go by how much we spent- a sure sign of how devoted we are as fans- mine are 'Bubblegum Crisis', 'Is It Wrong to Try to Pick Up Girls in a Dungeon?' (I bought the Blu-rays and licensed manga for the TV series, the movie 'Arrow of the Orion', the 'Sword Oratoria' and 'Episode Lyu' spinoffs), 'Overlord' (I bought the Blu-rays, imported art books, licensed manga, translated light novels), and 'The Saga of Tanya the Evil' (again, I bought the Blu-rays, imported art books, Volumes 1-5 of the light novels).
A few notable mentions though, based on my nostalgia for them and got me into anime:
Cardcaptor Sakura, the OG Pokemon series, Digimon (Tamers is the best one)

Dragon Ball, One Piece
I've been considering watching Naruto, just to see what the fuss (and the jokes) are about. I've still never seen it. I'm aware it has a lot of filler though, so might have to do some research to skip all that.
I’m gonna have to go with Miss Kobayashi’s Dragon Maid... super adorable, and now that I am older I appreciate much more Slice-of-life anime that are not highschool lol
