my first one would be Elfen lied, but i dont really count that as a ecchi, even though everybody taggs it as ecchi.
but other than that, it would be Sora no Otoshimino or Highschool of the dead.

The best Ecchi series is imo a tie between Tenchi Muyo and Sora no Otoshimono.
Shuffle! is a pretty bad anime. The VN is alright though. Shuffle! the anime falls victim to the boring lame pretending to be sexless male protagonist due to trying too hard to fit too many routes into a single semi-coherent storyline. The VN at least is acceptable because by default, it makes Rin a more decisive character.

In any case, I saw Golden Boy and Aika before the Ranma 1/2 anime, so it wouldn't be my first ecchi anime series.

Wasn't an anime, but my first ecchi series I can remember is the Paradise Kiss manga series... Seeing a guy doing his girlfriend on a table and all the groping was pretty intense for twelve/thirteen year old me.
