My favorite positions to view an ass from would have to be either with the girl kneeling and locking back, or with the girl laying on her back and lifting/holding her legs up. I don't think i could choose between the two positions... they're both fantastic. Heres a couple of both positions im talking about.

I would have to say ass up top down. Basically when a woman is on all fours with her ass pointed up. It gives a great view of everything and screams submissive, if you're into that sort of thing.
