You know you can only get it through direct contact (specifically secretions) during an outbreak right? Even if she were to touch her cold sore and touch a table, you wouldn't get it; the virus dies very quickly.
Just avoid touching the cold sore until the virus goes back into remission. They're usually seasonal or stress can induce them sporadically sometimes. Unless she has an active outbreak (aka you see the sore) you won't get it even if she were to give you a big smooch.
Besides HSV 1 (aka oral herpes) isn't even that big of a deal. Yes it stays with you forever, but it doesn't cause any issues for you except for some pain during the exasperated phases and can potential lead to HSV 2 (genetial herp a derp; I think of it as bee stings on your crotch lol). Same thing down there as up on the mouth, but other then being annoying, not a life threatening thing. Doesn't lead to any serious life complications either.
I work with ill people on a daily basis, I just use standard precautions (or other specific ones depending on the communicable disease route) and treat them like a person. It's fine to be nervous about getting something from someone, but I never saw any reason to treat a person like the plague for whatever they have.
So many people have a form of herpes (chicken pox, shingles, mono, roseola) that compared to other diseases this one is pretty minor.
