~~~Mai Tai~~~
- 8 parts white rum (one can mix multiple rums)
- 4 parts dark rum (aged rum preferred usually so a larger proportion may be used)
- 3 parts orange curaçao (can use triple-sec, though tarter, add syrup to compensate)
- 3 parts Orgeat syrup (can substitute with rich simple syrup or rock candy syrup)
- 2 parts lime juice (preferably fresh)
History:
Supposedly invented at the 555 California St. office in San Francisco
The name is a corruption of the Tahitian word Maita'i, meaning good
Notes and Prep:
Most common garnish is a pineapple spear and mint leaves
Shake ingredients with ice and strain to glass
Serve in a highball glass on the rocks with straw
Variations:
Modern Perfect: Uses light, dark, and proof rum, adds orange juice, and removes orgeat with simple and almond syrup
Pineapple/"fun rum": 4pt Orange juice:4pt pineapple juice:2pt lime juice:2pt light rum:2pt dark rum:1pt triple sec:1pt grenadine
