I never used knives to cut.
Wind blade is sharper and leaves a nicer cut.

Plasma is a good way, but in bakery, it leaves an cooked edge and that can affect final result
But it is useful when decorating.
You tried Beam/Laser Knife yet?
[color=#993300]I tried a modified Gundam beam knife the other day, but a lot of times, the output changes too quick so parts end up under/overcooked and leaves nasty layers. I usually use plasma knives with meats and dough based things cause it leaves a nice crust

That can happen if the chrystals and lenses arent focused correctly or have imperfections.
I tried using High Frequency blade, but i accidentally left it on and when i placed it on counter it cut itself to basement.
