Banana Pancakes with Peanut Butter and Jam
Serves: 4
Prep Time: 10 min.
Cook Time: 16 min.
Ingriedients for the batter:
2 cups of all-purpose baking mix
1 cup of buttermilk
1 cup of mashed banana's
2 lrg. eggs
1/2 tsp. ground cinnamon
Ingridients for the syrup:
3/4 cup of maple syrup
1/4 cup of peanut butter
1/2 cup of strawberry jam or jelly
Note: It really doesn't matter whar flavor jam/jelly you use.
1. Whisk together all of the ingridients for the batter in a large bowl just until the dry ingridients are moist.
2. Heat a large griddle or skillet over medium heat until hot. For each pancake, pout about 1/4 cup of batter onto griddle. Cook the pancakes until the tops are covered in bubbles and the edges look cooked; turn over and cook the other side.
3. Whisk together the maple syrup and peanut butter until smooth. Stack 3 pancakes on a serving plate, spreading about 1 Tbsp. jam between the layers. Spread peanut butter syrup over top. Serve pancaks with remaining peanut butter syrup.
