Well, the yolk is the part where the majority of the fat is at in an egg, yeah. However, it's more of a matter of consistence (texture, if you will) and flavor. The yolk actually has an ephemeral taste of its own, whereas the egg white does not. The yolk is generally firmer to the bite, whereas the egg white just tends to be more, eh...pudding-like.
It's perhaps easier to see what I mean by way of experiment:
Take a slice of black rye bread and a hard-boiled egg. Eat the slice with just the egg-white and it'll be relatively easy to swallow. Eat it with just the yolk and you'll be cotton-mouthed and feel like you're eating sand!
It's that difference in consistence that puts me off eating the egg-white by itself.
