1.How about introduce them to the world of visual novels and eroges? In my place almost every single anime watcher's knowledge is limited to the anime and not it's adaption, increase their level of otaku-ness. Im sure they would be glad to know about where their favourite animes come from, and plus, most of the VNs story telling are Better then the anime adaption.
2.Create your own original doujin, get to learn the process for doujin making.
3.Make a recommended list to each other for epic must watch animes, Higurashi, clannad etc, and make sure everyone watches it to smoothen discussions.
4.You can maybe introduce them to fighting games such as SF4, Melty blood and make competitions. I used to played meltyblood with my circle of friends and got addicted, and always compete against each other.

Oh god this , just this, every damn one of them must be a bleachfag or narutard. Anime clubs are under-developed, people are not well informed.
