well, the taste differs between people, though ^_^
I personally enjoy the remix album of Motteke! Seifuku from Lucky Star since I am a DDR fan, and the songs there are so DDR-ish :)
for ballads, I've just watched Hanbun no Tsuki ga Noboru Sora, and I found the OP and ED very nice and sweet..
also, for rock music, the band abingdon boys school seems popular nowadays. I don't like HOWLING very much, but I like the engrish quote at the beginning XD

whoa, I'm watching Hanbun no Tsuki ga Noboru Sora too, I really like the op it's harmonizing O_O (BTW I recommend people to watch the anime if you haven't)

The Light Before We Land (Gunslinger Girl OP) from The Delgados is still my all time fav :D

Gunslinger girl is a good anime because its one of the few out there that uses real firearm and I like the op thanks

Ah, just remembered, in Darker Than Black, the singer Rie Fu sang the ending entitled Tsukiakari. I reccomend this if you like her songs (one of them is Life is Like a Boat - Bleach ED).

BTW: I recommend you guys listen to NANA OP/ED and some songs she sings through out the anime its really good

Eh i used to listen to a lot of anime songs and such.. but now i switched to metal and stuff.. even thogu hi sitll ike soft songs if they sound nice

Maaya Sakamoto is a great singer..
Does anyone like SPITZ? their songs are easy listening and fun. Their biggest contribution in the anime so far was for the Hachimitsu to Clover insert songs, but they have a lot of great songs outside that too..

Bubblegum Crisis had some nice music. Try Konya wa Hurricane for some old school rock metal goodness.
I also liked the Fruits Basket OP, For Fruits Basket. The Yui Horie version is good, but the Ritsuko Okazaki (RIP) version is even better.
The song Friendship from Love Hina is also good.
Soberwolf is correct, the Eureka Seven songs are, indeed, awesome. Watch the anime if you haven't!

My favorite anime music has to be Joe Hisashi's score for Princess Mononoke. The main theme and the journey to the east theme especially are very beautiful.
