Besides, there is scientific proof that the human brain can do amazing things with the body. Why is it such a stretch to think that the mind can function outside of the presumed limits?

It's entirely possible that he believes he saw something with his third eye, but I entirely agree with you that he, in fact, did not.
I wouldn't trust something someone says they saw as a little kid, then stopped seeing anyways. It's not uncommon for kids to fail to distinguish between reality and fiction.
When I was younger, I saw all sorts of things that I now realize were hallucinations, or happened entirely in my head. Someone who believes in the supernatural and such would be very likely to take that same experience and say they saw things with their third eye, or they had a gift for seeing ghosts, rather than just saying, "It was crazy, but it didn't happen."
