I've waited a little to see how it's progressing but after chapter 3 I've got be honest here: Without Mounty the action animation feels very stiff (It's bad) which is a real pity because the action is the only redeeming trait I see in this show.
It's getting better. Fight in episode 6 is close to Monty levels, quite honestly.
Everything else is improving loads, too. The actors are comfortable in their roles, now, and they even have some professionals on board (Vic Mignogna and Elizabeth Maxwell), the story just got a huge kick, and animation is getting smoother and more refined across the board.
I will admit that most of the fights are a little lackluster without Monty. The first few are agonisingly slow-paced- the first real good fight being the one between Qrow and Winter.
Cynically, I would attribute the poor fights to the animators, in which I'm guessing are mostly late-teens to early twenties who take much of their influence from anime; speedlines and swishes galore, but not much action actually happening. Yang and Pyrrha are the only ones who get anything resembling choreography.
Again, though- they are getting better.
