Just say it was an honest mistake and that it'll never happen again. Yeah, delivery is about speedy service, but I think it's safe to say that companies that offer delivery services would rather people to be safe than sorry.
As for the court date, you really shouldn't stress about it, especially if this is your first ticket.
For starters, get to the courthouse at least 15 minutes before your scheduled appearance, and that's if you're planning to see the judge. I got a speeding ticket, so I can say from first-hand experience that as long you're honest about why you were speeding, they might reduce the fine, or waive it altogether if you take a driving course or deferred adjudication, (probation, basically, but with the promise that if you stay out of trouble for a certain amount of days, the offense won't show up on your record).
Just in case, take a notepad with a pen or pencil so that way you can write down whatever important information they tell you.
Just remember to stay cool, both with your boss and when you go to court, and you should be fine. I had to tell my boss that I had a court date, and thankfully, I was able to get a day off to take care of it.
