The line draws on this though when we ask ourselves, do we really want games to come out quickly and rapidly, even if they were made to our expectations? At the current rate games come out even, im having a hard time buying, and playing all of the games i buy, so it makes me less likely to buy a new game untill i know i will have time to play it. You can't logically buy everything you want when it comes out, especially if they start cranking stuff out faster.
It isn't so much the smaller companies we have issues with hording money, its the larger ones who make millions in profit they can't really use even after doing the things you said.
I agree that games are generally coming out too fast to be enjoyed properly nowadays. I would consider a prime example to be the Call of Duty franchise, apparently the two major developers (Treyarch, Infinity Ward) are pushed to come out with a new one every two years or so.
So again we come to what should be done with all the extra money large companies make... philanthropy comes easily to mind. I think we just reach a plateau as individuals and some times as people where we no longer have the capacity to take care of our own assets, and so they languish unspent.
