I did a little experimentation of my own with it. Two things I found:
1. You can choose which stage to start the game in. If you hold the left trigger on a gamepad (or B on the keyboard), you can access the level menu - 210 is start of stage 01.
2. Yes, you can edit characters with a little patience. If you go into the character edit menu, the top most option selects which slot to edit. For example, Sunohara After is slot 12 (you change values with Z and X keys, move through the menu with Up and Down keys).
The next option is which pose (1-255 I believe) to edit, followed by "layer" (body part).
Everything after the three top option are the modifiers. Three most important ones are XX + XY (which control position, also done with the mouse) and KAI (which controls rotation). The Left and Right keys basically scroll through the "layers," which you can edit.
If you delete a body part (with the delete key), one of the little boxes at the bottom will become transparent (they are the actual "layers," you can select them with the mouse too). Click the right mouse button; it will bring up a character sheet with several character parts. Draw a red square around something, click on it and it will appear on the character editor for you to modify as one of the "layers."
Oh, and if you want to SAVE your pose, just press the S key.
It seems you can also edit hit boxes and damage but I have not figure that out yet.

right click.. take me back to the edition option
and left click do nothing.. and make the red square dissapear
HOW do i take the things of the sheet.. to the editor option?!
