Actually watching the anime of HSD Kenichi is not so bad. It still follows the manga and stops after a certain arc. Of course if you want more from the story then you probably have to read the manga after finishing the anime.

I would say start with Wing. That was my first gundam ever. And you can probably watch the others like Seed, G gundam, or Gundam 00 afer that.
Well your gonna have to like mecha to finish watching the original Gundam story. I think the original gundam story has like 7 connecting series. I can never get myself to watch the original story..

Well, I can see most of them belongs in an action genre.
I recommend Black Cat, GunXSword, Tengen Toppa Gurren Lagann (same as FLCL made by Gainax), notice also the lack of Code Geass and Kara no Kyoukai (This is a 7 part movie but it was good)
