Personally, I'd say Marisa. Her focus on speed and dmg (nevermind the hitbox) suits my playing style the best IMO. With Reimu, I'd end up dragging a match for far too long with her low dmg, and I find that I die more when I'm exposed to danmaku longer.

Man... I thought I'd take a break from playing EoSD and play SA on easy mode... I can't seem to get past Orin... Stage 5 boss...

Well yes, but SA is too hardcore for what-so-called training, especially because you play it in easy modo.
I'd recommend you to pick UFO instead since the mechanic is the closest to early Touhou Windows installments.
One more thing: I think it's much better for you to improve your analyzing skill as for now; your reflex will improve as you play the games further.

heh the only 2 i ever beat at all was EoSD and PCB, PoFV i got to stage 7, and for the rest i got to the stage 5 boss

If it's Stage 5 bosses (who I believe are in their own tier), my favorites are between Rin and Shou. I just find their battles more entertaining (albeit less engaging) than Sakuya or Youmu. Reisen gets my bonus points for fanservice purposes, Futo is a tad too easy, and Sanae, well... she became a main character in the end, didn't she? (-w-)
Other than that, well... there's too much fanon for me to make a more educated decision, so I just went with what fighting them is like...

sakuya doesnt count as i have beaten EoSD, or id never have beaten flandre at any time

Character-wise, I'd go with Sakuya. The concept of her being a perfect and elegant maid who is able to stop time is just perfect to tickle my interest.
Gameplay-wise. By looking at her pattern and style, it's quite safe for us to assume that she is more into technical side. The only key to defeat her kind is to successfully analyze her patterns in order to find exploitable gaps and knives' direction. She is by far, one of the easiest 5th bosses for me, albeit I have to admit that she provided quite a challenge for me in my first time.
Alternatively, I could just pick Sanae.
That is if her role in MoF ain't that bland. Good to know that she got quite a makeover post-MoF, but that makes her image as one of playable characters overrides her image as the 5th boss, so yeah.

Fifth stage bosses? Hmm.... I've only faced Sakuya, Youmu, Reisen, Sanae, and Orin. I would have to say Orin, in terms of difficulty... but I would have to say my favorite fifth stage boss would be Youmu.

Does anybody plan to do the same to celebrate the cherry blossom ? I mean, we play Touhou for fun, but it will be much more fun/better if we play it for a specific purpose.

Yeah, her B bomb isn't meant to be powerful in term of damage, but it has the best duration for clearing the screen, at least more than any others. Aside from that, her usual shooting method is more like a precise widespread type; it can be good or bad, depends on your enemy and situation.
Just like what you said, the true usage of SakuyaB is to farm scores, or more precisely, spamming cherry bonus. If you are in MAX power, the bomb will convert your enemy's bullets into cherry points, thus helping you to assume border state faster.
One thing I don't like about Sakuya in PCB is her somehow-larger-than-others' hitbox. Okay, it's good for grazing/farming points, but I really don't like a risky method such as that.
Do your best and good luck to whatever you are trying to settle currently.
