I think I am the only one here that has played Saya no Uta and so this question is probably pointless, but would you guys consider Fuminori to be a yandere as well? Because with his condition, it wouldn't really be surprising but at the same time he does do many of his acts to protect Saya.

Yes, I'd say Fuminori can be classified as yandere for Saya, especially during the scene where she is raped by their neighbor and Fuminori beats him to death (if memory serves, it's been a while since I read it).
Both Saya and Fuminori can be considered yandere for each other, mainly because all they have is each other, so anybody who tries to interfere with them in whatever way ends up getting attacked/killed.
