As for anime, about 99% of the anime I watch I either just buy the DVD's, or for newer stuff watch torrents from stuff coming out currently, so I haven't watched much anime on Adult swim.

As for me, I mostly agree with rukia92, except for FLCL, I haven't seen that, and Deathnote, which had some promise at one point but just turned to utter crap, which made more sense after I found out the author was just pulling it out of his ass as he went along. At least the ending was decent though. And I don't see what enjoying InuYasha has to do with being a girl, there's plenty of action to go with the more touchy-feely parts of the story. If anything I'd call it pretty well balanced. Then again, I've always preferred a solid story and good character development to action.

Definitely Space Ghost, I remembered when they aired an episode where it was just the RL cast in a room reading their scripts, and yet I was still completely captivated.
Samurai Champloo, and Cowboy Bebop is a given for one of the best.
I like the Brak show, only because I was good friends with one of the cast.
Pretty much all the shows in the original line-up (meaning pre-2006) was made of win, although Home Movies was sort of hit-and-miss sometimes, I still can't forget the antics that came from shows like Sealab 2021 (lol, dolphin boy) and Harvey Birdman.

Witch Hunter Robin... that show seemed to get me hooked onto Adult Swim.I fucking loved that show. I remember it first started airing around the time I was in the hospital for a staph infection in my leg. That whole month was beyond hell, but Witch Hunter Robin was one of those shows that helped me get through it.
