I do a little eyeballing when baking, but definitely less then other cooking. Most of the time when I'm cooking I don't actually measure anything. Even with baking, whether I eyeball it or not, I tend to make small changes fairly often anyway and things always turn out well with whatever effect I was going for. The only times I've messed up baked goods were a couple batches of cookies that got overcooked or burnt at my old apartment before I figured out that the oven had a tendency to heat like 75 degrees over whatever you set it to.
