Practical disadvantages in converting MKV to AVI

I hear this question alot so im wondering how it turned out and what I can stay to assist someone further in the future.When i converted from MKV format to AVI as expected, the quality has dropped.It's even pixelating in some parts.
To compensate the quality i have to increase the bitrate of the video resulting the sizes to increase and won't fit a dvd-r anymore.
Also the subs,
It's so freaking big. Or it is just my converter?(There is no option to set how big the subtitle will be)

either you don't have the font(s) of the original subs in your pc or maybe you do have it but the converter used it's own formatting anyway.
you can try using mkvextract to rip the fonts from the mkv, install it on your pc then convert again and see if it resolves the issue.

Can someone recommend me what software to use when converting MKVs to other formats (preferably MP4)?
I'm using AlltoAVI which changes the fonts after the conversion.
Also when I tried converting Maria+Holic directly to DVD format (using convertx to dvd) some of the fonts get messy on the screen and whenever there are two subtitles to appear on the screen at one time, only one of the subs is showing.

Okay volt ill try that. is that an application?mkvextract comes with megui doesn't it? It is in my tools folder in my megui folder. http://sourceforge.net/projects/megui/
Installing the fonts should fix the problem when converting. If not then your program sucks for subtitles.
Also learning to encode things manually with megui instead of bothering with converting programs does wonders. Although its more complex and may vary from anime to anime. Read up on some aviscript. Choosing your own file size is great. Adjusting settings to adjust quality to meet your needs.
