Non-canon work such as anime fillers doesn't count, only feats that's been shown in the manga, and to some degree hyperboles.
Are we to assume that every Superman comic is canon, even though they generally have large inconsistancies between them? What would be considered the canon? If I can remember correctly the original superman was rather weak to what now days hes portrayed as.
A early version of Superman depicted him as not even being able to fly, and only taking large jumps, and moving at the speed of a bullet in the terms of the mentioned fighters is like racing sonic the hedgehog with pulling a 18 wheeler by your ears.
So, What along those lines could we take as canon for superman? A specific artist? A certain storyline?
(I actually have very little knowledge of Superman and only know what I do from the History channels special modern marvals on comic book heros...so what I mentioned could be slightly inaccurate.)
