As someone else pointed out, Simmon is likely the physical manifestation of a persimmon tree, perhaps even the physical embodiment of the persimmon festival itself.

The ending shows that the seasons have cycled and the persimmon trees are once again bearing fruit; the persimmon festival begins the next day, and Simmon will make his return.
So this is the first story of Kisen that the monster is the guy. All the others the monster is the girl. For a while i thought this mightve turned into Yuri.
The ultimate love story indeed, complete with sweet vanilla loving and a sad ending.
'Simmon-kun' though, and they mention persimmons? Well clearly they must be related...But hey, at least he promised to meet her again next year, and it'd be great if we could see the reunion.
