Paying attention to details will help you better understand the larger picture and overall story though. And if romances that occur in the story don't contribute to the "overall" picture then they should just be left out. But since it is included, and since a larger portion of time is dedicated to these romances, they should be paid attetnion to since they are just as important as any other aspect of the story. You know, if you want to get the "bigger picture".

Alright, let me put it in a way you’d easily understand. You know what a photo mosaic is—a †˜picture’ made of lots of smaller, put-together pictures; much like a puzzle. Right! Now, imagine every scene in DRRR!! in form of photographs, all used/arranged to form a †˜bigger picture’ which would best describe the series as a whole. Guess what? You’re right! They(aspects such as romance) do make up the †˜bigger picture’ ONLY they don’t make up the foreground (centerpiece image), which is undoubtedly the highlight of the whole picture; all they were used for was to fill-up the background.
And as to why some viewers, such as your self, actually see it that way is beyond me. I guess you’ve got your romantic-anime exposure to blame since I’ve clearly got no issue with whatsoever regarding DRRR!! thanks to my very diverse taste in anime.

Did Shinra become a doctor for Celty? If so, why isn’t he using the knowledge he accumulated to satisfy his fascination of her? And if he’s only/that fascinated by her (not being human) and is not really in love/delusional or is simply using love to manipulate her, would he have contemplated on telling her what he knew? Why didn’t he just tell her sooner? Why tell her even?
If you want me to elaborate on these contradictions, all you have to do is ask.

I simply think they are a bad match. If a couple is a bad match in an anime, you either discount the couple and not care about them, or you usually dislike the character who you think is most detrimental to the relationship.
What in the "I couldn’t care less" didn’t make sense to you? But anyways, who do you suggest would match Celty the best, then? Simon?

Example is Karasuma from School Rumble. EVERYONE hates him at the end of the series becuase Tenma liked him when she should of liked Harima (unless you were a fan of one of the other girls). Karasuma wasn't a bad guy, and there wasn't anything about him to dislike, but because he took the attention of one of the popular character and ruined what everyone else was hoping for, he became hated.
The samething applies towards Shinra.
SO BASICALLY, IF A CHARACTER IS AN ODDBALL, HE IS GOING TO BE HATED? Seriously now, you’re saying that if you expected something out of a character and that expectation fell through, it is suddenly the character’s fault? Really now, this is probably the most absurd reason to hate on a character I’ve ever heard.
Nevertheless, great example. I don’t like Harima, nor Tenma, nor Karusama—more like I don’t really care about them at all. I suppose I can understand what you’re saying it's just that I can’t empathize with what you’re feeling. I’m just not one to hate characters based on what they chose to do or not to.
On a side note, Honey and Clover is one romantic series I could remember wherein no soul was ever hated in the process of my watching the anime. I’ll refrain from going through the excruciating detail. (all you need to know is: Takemoto x Hagu / Mayama x Rika / Morita x Ayu)
EPICsode 14: Shingen, Shingen, and more Shingen!! Hands down, the master of manipulation! It simply takes one to know one I guess, though I'm not quite there yet at that level of how awesome he is.
The only flip side of the episode is that the wedding's off. Bummer, and just right after Shingen has given his approval.
