You don't have to worry about your language changing to Japanese or anything. Some programs might change, I wouldn't do any updating of your programs or system updates while you have non-unicode on. But as far as core system stuff like your folders, system files, start menu, control panel etc it won't change. I run my comp with non-unicode settings 80% of the time I am on it.
