For Me Its:
1. Mahou Sensei Negima [personal fav] 1st
REAS: the storyline is very good plus the graphics are superb. Ideas are out of this world and .....I dun know, very addictive {filled with Ecchi and nice chara.}
2. Fullmetal Alchemist
REAS: unique in its own way. I guess everyone knows why.
3. Fate/Stay Night [personal fav] 2nd
REAS: Just marvellous, Outstanding, Superb, Wonderful, ....addictive

FLCL - Easily my favorite anime and manga. Followed closely by...
Eureka Seven - I really really loved this show. It was just great. (I'm a sucker for a love story.) And it had mechs. Totally great. The third one is...
Hellsing - I always loved vampires and when I saw this the first time bricks were shat. Alucard (Arucard, whichever you prefer) is a badass and I could watch him kick ass for days.
There are others, but these are the most prominent in my head at the moment.

Gungrave: There are many great gunslingers in anime, but Brandon Heat/Beyond the Grave, is number 1 on my list! Lots of pew pew, and an awesome story all in one!
Candy Candy: Anime from my childhood days. Loved it back then, and still do now.
Paranoia Agent: Prety sweet series. Even now it still leaves me wondering about it...
Gundam 00: "Yes, this shall be the Gundam that will lead humanity!" -Ribbons Almark. That quote is so epic...even though he's a bad guy.
Lucky Star: Kuroi-sensei and Hiyori.
Genshiken: I kinda look like Tanaka, but act like Kugayama...somewhat.

2: Slayers. I loved the pacing and the overall tone of the story.
3: Baccano. The way they chopped up the story and going back and forth between all the parties involved and all the time period, there was never enough satisfaction each episode. You can't help but want to see what happens next.
