I think it wouldn't be too weird for Nue to be a playable though, she's a part of UFO cast, and I also think "just for fun" can be an enough reason/motivation for a character to take part in the fighting game. Of course all of these are still a mere speculation and wishlist. I hope we can get more clues and info from the upcoming manga, Forbidden Scrollery and winter comiket.

"Just for fun" may only be a face-value reason. Everyone (including youkai) has their own selfish goals. When you think of the little plot we know of the game, three religions preach to humans to get followers, people who normally appear to have no reason to be involved may turn up, like the Nue. In her case, she lives on fear from humans. Imagine if all the humans became like Byakuren (not power, calm like a master monk), none of them would fear her. There are youkai who believe coexistence with humans is impossible, certainly an ideology that supports coexistence is not in their favor. The effects of Taoism and Shintoism are equally important as well. It was said in Symposium that currently Gensokyo is in a precarious position, which looks to be the theme of HM (MM).

It's just if it exists, there is a touhou parody of it.
Touhou fanartists (or pixiv's in general) are well-known to be fast as well. If I recall correctly, back when Ten Desires' first playthrough was revealed at nico-nico, it only took approximately 15 minutes for one of the artists to draw a well-colored Miko. Some of Touhou pics parodying that Misaki-Mei-clone's motion is just yet another proof of the artists' ability.
