That would be exactly why people think anime is getting "shitty". I think that also may be why anime's are getting 13 episodes in their first season. Its cheaper to test the water of the market before committing.
If you are looking for "diamonds in the rough" then you would find more if you went looking for manga and light novels (LN's). Both are MUCH cheaper to produce than anime and most anime come from them anyways. Anime and movies are more of a showcase of what is hot right now, or when they were green-lit anyways. Anime based on these also have a tendency to, sometimes unintentionally, leave out some of the best parts. For example, a writing or narration style may not carry to an anime.
"Moe" is a fad. It will disappear eventually or fall to another fad. Like you said, OP, if you leave it, it will change. If it bothers you that much just go to mangafox, sort all the manga by name. Start with .hack or whatever is first on the list and read. You can read 50 pages of manga or so in less time than the 25 minutes of an anime episode.
